A beer list is basically a well-diversified portfolio: you want a core holding (Guinness, reliable as a government bond) and a few speculative small-caps that might blow up spectacularly, in a good way. These are the pints I keep going back to between Leinster matches and lunch-break paperbacks, ranked on nothing scientific whatsoever, just like most of my spreadsheets.

1Guinness DraughtGuinness DraughtSt. James's Gate BreweryDry StoutGuinness Open Gate Brewery, 53 James's Street, Dublin 8The index fund of Irish beer. Boring to recommend, impossible to argue with. Always outperforms expectations.
2RolloverRolloverWhiplash BeerSession IPAFidelity, 79 Queen Street, Dublin 7Light enough that I've convinced myself it's a palate cleanser between proper pints. It isn't. Dangerous, like a page-turner on a work night.
3Bullseye Nitro StoutBullseye Nitro StoutRascals Brewing CompanyNitro StoutRascals HQ, Unit 5 Goldenbridge Estate, Tyrconnell Road, Inchicore, Dublin 8Pairs with their wood-fired pizza the way a good opening line pairs with a long novel. Worth the trek out past Kilmainham.
