Deep dish that isn't a tourist trap

Look, I love this city like I love the '85 Bears, unconditionally and a little too loud about it. But if I see one more tourist get hustled into a 90-minute wait at a Mag Mile pizza chain, I'm gonna lose it. This is my personal bullpen of deep dish and pan pizza spots, the ones I actually hit after a long week of resetting passwords and losing board game rules arguments. No Riverwalk gift-shop pizza here. These are the real Jordan-in-the-Finals picks.

1Pequod's PizzaLincoln Park2207 N Clybourn Ave, Chicago, IL 60614ChicagoPan pizza with the caramelized cheese edgeThat burnt cheese ring is basically the Bulls' threepeat of crusts. Non-negotiable.
2Bartoli's Pizzeria (Roscoe Village)Roscoe Village1955 W Addison St, Chicago, IL 60613ChicagoBYOB deep dish with sausageBYOB means I bring my own Malort and my own opinions about the Cubs' bullpen. Zero frills, all flavor.
3The Art of PizzaLakeview3033 N Ashland Ave, Chicago, IL 60657ChicagoDeep dish by the sliceOnly spot where I can get a quarter pie on a lunch break instead of calling in a sick day like it's a Bears bye week.
4My Pi PizzaBucktown2010 W Pierce Ave, Chicago, IL 60622ChicagoClassic deep dish, dairy-free option availableQuiet little gem, zero Instagram line out the door. The Bartman of pizza joints, underrated and unfairly blamed by nobody.
5Vito & Nick'sAshburn8433 S Pulaski Rd, Chicago, IL 60652ChicagoThin crust tavern-style sausage pizzaDeep dish gets the hype but this is the thin-crust OG since '49. South Side loyalty, no questions asked.
6Gino's EastRiver North162 E Superior St, Chicago, IL 60611ChicagoCornmeal crust deep dishYeah it's crawling with tourists but the cornmeal crust earns its minutes, like a role player who actually shows up in the playoffs.
7Chicago Pizza and Oven Grinder Co.Lincoln Park2121 N Clark St, Chicago, IL 60614ChicagoPizza pot pie, flipped upside down tablesideIt's not technically deep dish, it's a POT PIE, but the theatrics alone deserve a curtain call. Bring friends who haven't seen the flip.
