When a sprint goes sideways and Leinster knock on the ball AGAIN, this is where I go to make peace with the universe via juniper. These are my regular haunts for Irish bottles, decent glassware and staff who don’t flinch when I say, “Surprise me, but make it weird.” If you see someone on a laptop stress‑prototyping between G&Ts, that’s probably me. 3Bar 1661	1–5 Green Street, Rotunda, Dublin 7, D07 YT6H	Dublin	Technically poitín royalty, but the way they treat Irish gin is pure wizardry. Order something you don’t understand and trust the process.
